well here is an easy one and the kids will enjoy them to :

Chunky Chips
Servings 4
Preparation Time 15 min
Cooking Time 30 min
Level of Difficulty : Easy side dishes

Ingredients
2 1/4 pound uncooked potato(es), (1kg), peeled and cut into thick chips 10 sprays cooking
spray
1 tsp table salt 1/8 tsp black pepper, Freshly ground 1 tsp paprika, (optional)

Instructions
1. Preheat oven to 200°C Put a large roasting tin in the oven to preheat at the same time.
Make sure that the chips are dry, by patting them with kitchen paper or drying them in a clean tea towel.
2. Remove the hot roasting tin from the oven. Spray with low fat cooking spray. Tip in the chips, then spray 6 times with low fat cooking spray. Season with salt, pepper and a pinch of paprika (if using).
3. Roast the oven chips for 30 minutes, turning after 20 minutes. Cook for a little longer if necessary, so that the chips are cooked and browned.Prepare the potatoes up to 2 hours in advance, keeping the uncooked chips in a large bowl of cold water until needed, then drain well and pat dry.

Patty this one is for you ......
Shortbread Meltaways

1 cup, 250 mL] unsalted butter, softened
1/2 cup, 125 mL] icing sugar
2 tsp, 10 mL] vanilla
1 3/4 cups, 425 mL] ROBIN HOOD® All Purpose Flour
1/2 cup, 125 mL] CANADA® Corn Starch
3/4 tsp, 3 mL] baking powder
1/4 tsp, 1 mL] salt
1 cup, 250 mL] CHIPITS®*SKOR®* Toffee Bits
Preparation
PREHEAT oven to 350ºF (180ºC). Line cookie sheets with parchment paper.

BEAT butter, icing sugar and vanilla until creamy. In a separate bowl, combine flour, corn starch, baking powder and salt; stir half into butter mixture. Stir in toffee bits and remaining flour mixture.
ROLL heaping tablespoonfuls (15 mL) of dough into balls. Place on prepared cookie sheets, spacing about 2" (5 cm) apart.
BAKE in centre of preheated oven for 15 minutes or until lightly golden. Let cool on pan for 5 minutes. Dust with more icing sugar if desired.

Tips:
Meltaways can be stored in an airtight container for up to 2 weeks.
Kid friendly recipe: Your kids will have a great time rolling the dough into balls.
These bite-size cookies are great for a small indulgence, but be careful, they are so delicious they will disappear quickly.

Moo Shu Chicken Quesadillas
Servings 4.....Preparation Time 14 min......Cooking Time 20 min

East meets West with this Chinese take on a Mexican classic. It's a culture clash that the whole family's sure to love.

Ingredients
sprays cooking spray
2 tsp sesame oil
3/4 pound chicken breast, uncooked, boneless, skinless, cut into bite-size pieces
1 tsp soy sauce 28 oz mixed vegetables,
Asian-style 4 medium scallion(s), chopped
1 tsp soy sauce, or to taste
1/2 cup hoisin sauce
1/2 cup part-skim mozzarella cheese,
shredded 8 medium whole wheat tortilla

Instructions
Preheat oven to 425°F. Coat a large skillet or wok with cooking spray; add oil and heat over high heat until sizzling.
Add chicken and soy sauce to wok or skillet; cook, stir-frying, until well-browned, about 5 minutes. Add vegetables, scallions and soy sauce; cook about 2 minutes. Add hoisin sauce; stir-fry until heated through, about 1 minute.
Place 4 tortillas on a large baking sheet (or 2 smaller baking sheets). Spread about a heaping 3/4 cup of chicken-vegetable mixture over each tortilla and sprinkle each with 2 tablespoons of cheese; top with remaining tortillas.
Bake quesadillas until golden brown and cheese melts, about 10 minutes. Remove from oven and let sit about 5 minutes before cutting each quesadilla into 2 or 4 wedges each. Yields 1 whole quesadilla per serving.
Notes
Instead of using canned Asian-style veggies, go ahead and use fresh ones such as a combination of sliced pea pods, shredded green cabbage, slivered bamboo shoots, sliced water chestnuts and grated carrot. If you're tired of chicken, turkey or pork tenderloin tastes great in this recipe, too.

Well here is the last time I will mention DECEMBER 6Th ....our nephew Bobby and Barry's twin Bill also were born this luck day ....boy hey 4 in one day ..we were lucky enough to get a little bit of a celebration with Bobby...we had them down on November the 11 Th also ..and did a cake and song for him. Then his wife Sharley then had a surprise party at our daughter's Patty and let me tell you BOBBY was surprise....we love you Bobby and HAPPY BIRTHDAY.



We were unable to celebrate with Barry twin brother Bill ..but we wish him the best ..and want to let him know we love him ..and maybe one day soon we can all get together .....if that's OK ...

Well not only is it Papa's b-day today it is also our grand daughters Madison.....
Dec 6th, 2001


Barry had the privilege of his birthday date to be the deliver dated of our Grandaughter Madison. Way to go Mindi.
The picture to the right is one of Papa at the top then Melissa then Jordana and then Madison.
We were able to do a little bit of gift opening and ice cream cake with Madison on November the 11 th when they came down to be involved with a surprise party for Barry ( Papa)


So we all enjoyed our time together

beening with BARRY on his BIG 50 ..we had a party on November the 11th for those that had to travel a distance and then another one Dec 3th for those family and friends close ..and then finished it up on Dec 4th .....we were to finish the really night of his b-day on Wednesday December 6th..but Barry got called to work so we phone the guys and friends and meet on Monday night and I want to thank you all for coming out .
Barry was honour and shown has much he is loved by family and friends and also how much he is repected by guys from work ..again thanks for coming out on such short notice.

Awesome job Patti. I could of done more but I so excited about wanting to
share Patty pictures and use my sweet sister in laws elements,
the frost snowflakes and frames.
